Avocado Cowboy Caviar with Homemade Lime Tortilla Chips

This is one of the easiest snacks you can throw together for a party during the summer. It's even better on the second day, so it's best to make it a day ahead. This give the flavors a chance to meld with the super simple "marinade."


Typically, cowboy caviar doesn't have avocado, but I love the extra layer of texture and color it adds (plus, who doesn't love avocado?!) This is a very kid-friendly recipe, so I eliminated some of the spicier ingredients. Instead, this is bright and fresh and it is perfect for hot afternoons.



Ingredients


1 can black beans

1 can sweet corn

1 cup grape tomatoes, quartered

1/2 red onion, diced

1 avocado, diced

1/4 cup EVOO

2 limes, zested and juiced (keep separate the zest and 2 tsp juice)

1 Tbsp Agave nectar

1 tsp chili powder

1 tsp cumin

coarse salt and pepper, to taste

10 8" flour or corn tortillas


Avocado Cowboy Caviar

  1. In a large bowl, combine black beans, corn, grape tomatoes, and red onion.

  2. In a small bowl, whisk together EVOO, lime juice, agave nectar, chili powder, cumin, and salt and pepper until combined. Pour over black beans and corn mixture and toss together.

  3. Cover and set in the fridge overnight.

  4. Right before serving, gently toss in the diced avocado. If you do this too soon, the avocado will turn brown.


Lime Tortilla Chips

  1. Preheat over to 350°

  2. Cut tortillas into quarters. Using a pizza wheel can make this step a lot easier since you can cut multiple tortillas at once

  3. Lay the tortillas on a parchment paper-lined baking sheet. You may need to make the chips in batches.

  4. Using the 2 tsp of lime juice that was set aside, brush the tortillas on both sides, then sprinkle with coarse salt.

  5. Bake for 10-15 minutes until the tortillas are crispy, but not browned.

  6. Transfer to a plate, but while they're still hot, sprinkle on the lime zest and cool before eating.


If I had known how easy it was to make healthy lime tortilla chips, I would have done it years ago! This recipe is so simple to whip up if you have company or are bringing a side dish to a cookout.
