The Laziest Cookie Bars

Y'all. This is the easiest thing I've ever baked in my life. I am a recovering baking-disaster, so when I find a recipe that I absolutely love (and that's 100% impossible to mess up), I need to share it! It's as easy as mix, dump, bake... voila! Chocolate chip cookie bars.

It's summer and it's hot. No one wants to spend time in the kitchen - this cake takes 5 minutes to prepare! Using only 4 ingredients that you probably already have in your pantry, it's simple to throw together on a whim or when you need something sweet.

My 13-month-old has developed a love of desserts (no thanks to her grandmothers!) and this was no different. She got excited just standing in front of the oven while it baked and the smell of warm cookies filled the house. Giggling as soon as they came out of the oven, she was over-the-moon for the gooey chocolatey goodness of these cookie bars. She actually cried real tears when it was all gone. If that doesn't mean they're good, I don't know what does!

Super simple, super versatile, you'll wonder why you ever made anything different.

Ingredients

6 Tbsp butter, unsalted

2 large eggs

1 box yellow cake mix

12 oz semi-sweet chocolate chips

1. Combine cake mix with beaten eggs and melted butter in blender (it will be thick!)

2. After well-mixed, add chocolate chips

3. Spread batter into a well-greased baking pan. For thick cookie bars, use a 7x11 pan. For thin cookie bars, use 9x13. Use your fingers to get the batter around the edges of the pan.

Bake at 350 degrees for approximately 30 minutes, or until cooked through evenly. The edges should be golden brown when finished baking.

We snuck a bite before they were completely cooled, and they were so ooey-gooey (just like any good chocolate chip cookie!). Because using the cake mix makes this dessert so versatile, you can use any cake flavor you prefer and switch up the "good stuff" by using nuts or other "fillers" (like marshmallows, candy pieces,. etc.). Strawberry, Devil's Food, Red Velvet.. any flavor you like the most! These cookie bars are impossible to mess up, so have fun with flavor combinations.

Serve warm with a nice cold glass of milk and enjoy!

xoxo
