Ingredients

  • 8oz dark chocolate, chopped

  • 1/2 cup butter, cut into pieces

  • 1 cup keto sweetener (I used Splenda)

  • 5 eggs, separated

  • 1/2 teaspoon salt

  • 2 teaspoon vanilla extract

  • 1 Tbsp cocoa powder


Instructions

  1. Preheat your oven to 325 degrees Fahrenheit, and grease an 9" springform pan with butter. Dust with cocoa powder

  2. Melt the dark chocolate and unsalted butter in a microwave at 30-second increments until smooth and creamy. Set aside to cool slightly.

  3. Separate eggs and place egg whites into a stand mixer. Set aside yolks for later. Gently whisk the egg whites on medium and gradually add in sugar until stiff peaks form.

  4. Add egg yolks, vanilla extract, and salt into the chocolate mixture and combine.

  5. Slowly fold in the melted chocolate mixture into the egg whites and fold until everything is fully incorporated and smooth in texture. Make sure there are no white or chocolate streaks.

  6. Pour the batter into your greased baking pan and spread it evenly with a spatula or spoon.

  7. Bake for 45-60 minutes, or until a knife comes out clean.

  8. Let it cool completely before removing from pan.

Top with powdered sugar, whipped cream, or fresh berries.
